In contemporary times, this crop has become highly appreciated for its nutritional value, as its protein content is very high, in addition to being a good source of dietary fiber and phosphorus. High in magnesium and iron, quinoa is gluten-free and considered easy to digest.

At The Fairmont Kea Lani, Maui, the Chilled Quinoa Salad is perfect for a healthy poolside snack, while The Fairmont Chateau Whistler offers a Quinoa Risotto, which is a creative take on the more common wheat-based risotto. In Seattle, The Fairmont Olympic Hotel even created a heart healthy Georgian Free Range Chicken with Quinoa dish.
